Ingredients

  • Fresh coconut, grated - 100 grams
  • Coconut milk - 50 ml
  • Maple syrup - 2 tablespoons
  • Saffron strands - a pinch
  • Cardamom powder - 1/4 teaspoon
  • Almonds, finely chopped - 2 tablespoons
  • Pistachios, finely chopped - 1 tablespoon
  • Rose water - 1 teaspoon

Steps

  1. In a small bowl, soak the saffron strands in 1 tablespoon of warm coconut milk for about 10 minutes.
  2. In a mixing bowl, combine the grated coconut, remaining coconut milk, maple syrup, cardamom powder, and rose water.
  3. Add the saffron mixture to the coconut mixture and stir well to combine all the ingredients.
  4. Transfer the mixture to a non-stick pan and cook on low heat, stirring continuously until the mixture thickens and starts to leave the sides of the pan (approximately 10-15 minutes).
  5. Remove from heat and allow it to cool for a few minutes.
  6. Once cool enough to handle, divide the mixture into two equal portions and shape them into flat discs or desired shapes.
  7. Garnish each sandesh with finely chopped almonds and pistachios.
  8. Refrigerate for at least 15 minutes to set before serving.
