Ingredients
- Fresh coconut, grated - 100 grams
- Coconut milk - 50 ml
- Maple syrup - 2 tablespoons
- Saffron strands - a pinch
- Cardamom powder - 1/4 teaspoon
- Almonds, finely chopped - 2 tablespoons
- Pistachios, finely chopped - 1 tablespoon
- Rose water - 1 teaspoon
Steps
- In a small bowl, soak the saffron strands in 1 tablespoon of warm coconut milk for about 10 minutes.
- In a mixing bowl, combine the grated coconut, remaining coconut milk, maple syrup, cardamom powder, and rose water.
- Add the saffron mixture to the coconut mixture and stir well to combine all the ingredients.
- Transfer the mixture to a non-stick pan and cook on low heat, stirring continuously until the mixture thickens and starts to leave the sides of the pan (approximately 10-15 minutes).
- Remove from heat and allow it to cool for a few minutes.
- Once cool enough to handle, divide the mixture into two equal portions and shape them into flat discs or desired shapes.
- Garnish each sandesh with finely chopped almonds and pistachios.
- Refrigerate for at least 15 minutes to set before serving.
