Ingredients

  • Full-fat milk - 500 ml
  • Sugar - 4 tablespoons
  • Saffron strands - 1/4 teaspoon
  • Cardamom powder - 1/2 teaspoon
  • Chopped almonds - 1 tablespoon
  • Chopped pistachios - 1 tablespoon
  • Rose water - 1 teaspoon
  • Cornstarch - 1 teaspoon (optional, for thickening)

Steps

  1. In a heavy-bottomed pan, boil the full-fat milk over medium heat, stirring occasionally to prevent it from sticking to the bottom.
  2. Once the milk comes to a boil, reduce the heat to low and let it simmer until it thickens, stirring frequently (about 20 minutes).
  3. In a small bowl, soak the saffron strands in 2 tablespoons of warm milk for 5 minutes.
  4. Add the soaked saffron with its milk, sugar, and cardamom powder to the thickened milk and stir well to combine.
  5. If you prefer a thicker rabri, mix the cornstarch with 1 tablespoon of cold milk to make a slurry, then add it to the rabri and cook for an additional 5 minutes until it thickens further.
  6. Remove the pan from heat and add rose water, stirring well.
  7. Let the rabri cool down to room temperature, then refrigerate for at least 1 hour before serving.
  8. Serve chilled, garnished with chopped almonds and pistachios.
