- Cardamom powder - 1/2 teaspoon
- Chopped almonds - 1 tablespoon
- Chopped pistachios - 1 tablespoon
- Rose water - 1 teaspoon
- Cornstarch - 1 teaspoon (optional, for thickening)
Steps
- In a heavy-bottomed pan, boil the full-fat milk over medium heat, stirring occasionally to prevent it from sticking to the bottom.
- Once the milk comes to a boil, reduce the heat to low and let it simmer until it thickens, stirring frequently (about 20 minutes).
- In a small bowl, soak the saffron strands in 2 tablespoons of warm milk for 5 minutes.
- Add the soaked saffron with its milk, sugar, and cardamom powder to the thickened milk and stir well to combine.
- If you prefer a thicker rabri, mix the cornstarch with 1 tablespoon of cold milk to make a slurry, then add it to the rabri and cook for an additional 5 minutes until it thickens further.
- Remove the pan from heat and add rose water, stirring well.
- Let the rabri cool down to room temperature, then refrigerate for at least 1 hour before serving.
- Serve chilled, garnished with chopped almonds and pistachios.
