- Full-fat milk - 500 ml
- Sugar - 4 tablespoons
- Saffron strands - 10-12
- Cardamom powder - 1/4 teaspoon
- Chopped nuts (pistachios and almonds) - 2 tablespoons
- Rose water - 1 teaspoon
Steps
- In a heavy-bottomed pan, bring the full-fat milk to a boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.
- Once the milk comes to a boil, reduce the heat to low and let it simmer, stirring frequently until it reduces to about half its volume (approximately 20-25 minutes).
- Soak the saffron strands in a tablespoon of warm milk for 5 minutes, then add it to the simmering milk.
- Add sugar and cardamom powder to the reduced milk, stirring well to combine, and continue to simmer for another 5-7 minutes until the mixture thickens slightly.
- Remove the pan from heat and add rose water, mixing well.
- Let the rabdi cool slightly, then pour it into serving bowls or glasses.
- Garnish with chopped nuts before serving, either warm or chilled.
