- Coconut milk - 400 ml
- Almond milk - 200 ml
- Rice flour - 3 tablespoons
- Agave syrup - 4 tablespoons
- Saffron strands - 1 teaspoon
- Cardamom powder - 1/2 teaspoon
- Chopped nuts (almonds, pistachios) - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- In a small bowl, soak the saffron strands in 2 tablespoons of warm water or almond milk to release its color and flavor.
- In a saucepan, combine coconut milk, almond milk, and a pinch of salt. Heat over medium flame until warm, but do not boil.
- In a separate small bowl, mix the rice flour with a few tablespoons of the warm coconut-almond mixture to create a smooth slurry.
- Gradually add the rice flour slurry into the warm coconut-almond mixture, stirring continuously to avoid lumps.
- Add the soaked saffron mixture, agave syrup, cardamom powder, and vanilla extract into the saucepan. Stir well and cook for an additional 10-15 minutes, or until the mixture thickens to a pudding-like consistency.
- Once thickened, remove from heat and pour the pudding into serving bowls or cups.
- Allow the pudding to cool at room temperature for a few minutes, then refrigerate for at least 1 hour to set.
- Before serving, garnish with chopped nuts and a few saffron strands.
