  • Almond flour - 100 grams
  • Unsweetened almond milk - 400 ml
  • Saffron strands - 1/4 teaspoon
  • Erythritol - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Pistachios, chopped - 2 tablespoons
  • Rose water - 1 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. In a small bowl, soak the saffron strands in 2 tablespoons of warm almond milk for about 10 minutes.
  2. In a saucepan, combine the remaining almond milk and almond flour over medium heat, stirring continuously to avoid lumps.
  3. Add the soaked saffron along with the milk to the saucepan and continue to cook, stirring frequently until the mixture thickens (about 10-15 minutes).
  4. Once thickened, add erythritol, cardamom powder, rose water, vanilla extract, and a pinch of salt. Mix well until fully incorporated.
  5. Remove the saucepan from heat and let it cool for a few minutes. Pour the mixture into serving bowls.
  6. Garnish with chopped pistachios on top and refrigerate for at least 1 hour before serving.
