Ingredients
- Full-fat milk - 300 ml
- Coconut milk - 100 ml
- Saffron strands - 1/4 teaspoon
- Pistachios (finely chopped) - 2 tablespoons
- Honey or maple syrup - 2 tablespoons
- Cardamom powder - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
- Cornstarch - 1 tablespoon
Steps
- In a small bowl, soak the saffron strands in 2 tablespoons of warm milk for about 10 minutes.
- In a saucepan, combine full-fat milk and coconut milk, and bring it to a gentle simmer over medium heat, stirring occasionally.
- Add the soaked saffron milk, honey or maple syrup, cardamom powder, and vanilla extract to the milk mixture, and stir well.
- Mix the cornstarch with 2 tablespoons of cold milk until smooth, then add it to the simmering milk mixture, stirring continuously until it thickens (about 5-7 minutes).
- Remove from heat and let the mixture cool to room temperature, then fold in the chopped pistachios.
- Pour the mixture into kulfi molds or small cups, cover with lids or plastic wrap, and freeze for at least 6 hours or until completely set.
- To serve, dip the molds in warm water for a few seconds, then gently pull out the kulfis and enjoy.
