Ingredients

  • Full-fat milk - 300 ml
  • Coconut milk - 100 ml
  • Saffron strands - 1/4 teaspoon
  • Pistachios (finely chopped) - 2 tablespoons
  • Honey or maple syrup - 2 tablespoons
  • Cardamom powder - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Cornstarch - 1 tablespoon

Steps

  1. In a small bowl, soak the saffron strands in 2 tablespoons of warm milk for about 10 minutes.
  2. In a saucepan, combine full-fat milk and coconut milk, and bring it to a gentle simmer over medium heat, stirring occasionally.
  3. Add the soaked saffron milk, honey or maple syrup, cardamom powder, and vanilla extract to the milk mixture, and stir well.
  4. Mix the cornstarch with 2 tablespoons of cold milk until smooth, then add it to the simmering milk mixture, stirring continuously until it thickens (about 5-7 minutes).
  5. Remove from heat and let the mixture cool to room temperature, then fold in the chopped pistachios.
  6. Pour the mixture into kulfi molds or small cups, cover with lids or plastic wrap, and freeze for at least 6 hours or until completely set.
  7. To serve, dip the molds in warm water for a few seconds, then gently pull out the kulfis and enjoy.
