- Almond flour - 100 grams
- Coconut milk - 150 ml
- Maple syrup - 50 ml
- Saffron strands - 1 pinch
- Pistachios, finely chopped - 30 grams
- Cardamom powder - 1/2 teaspoon
- Coconut oil - 1 tablespoon
- Salt - a pinch
Steps
- Soak the saffron strands in 1 tablespoon of warm coconut milk for about 10 minutes to release their color and flavor.
- In a non-stick pan, heat the coconut oil over medium heat and add the almond flour, stirring continuously for about 5 minutes until lightly toasted.
- Add the soaked saffron with the coconut milk, remaining coconut milk, maple syrup, cardamom powder, and a pinch of salt to the pan.
- Cook the mixture on medium-low heat, stirring constantly until it thickens and starts to leave the sides of the pan, about 10-15 minutes.
- Once thickened, remove from heat and fold in the chopped pistachios, reserving a small amount for garnishing.
- Transfer the mixture to a greased plate or tray, spreading it evenly to about 1 cm thickness.
- Garnish with the reserved pistachios and allow it to cool at room temperature for 30 minutes, then cut into squares or diamonds.
