Ingredients

  • Full-fat milk - 500 ml
  • Saffron strands - 1/4 teaspoon
  • Sugar - 100 grams
  • Cardamom powder - 1/2 teaspoon
  • Heavy cream - 100 ml
  • Chopped pistachios - 2 tablespoons
  • Chopped almonds - 2 tablespoons
  • Rose water - 1 teaspoon

Steps

  1. In a saucepan, bring the full-fat milk to a boil over medium heat, stirring occasionally to prevent it from sticking.
  2. Once boiling, reduce the heat and let it simmer for about 15-20 minutes until it reduces to about half its volume.
  3. Soak the saffron strands in 2 tablespoons of warm milk for about 5 minutes to release their color and flavor.
  4. Add the sugar and cardamom powder into the reduced milk, stirring until the sugar completely dissolves.
  5. Stir in the saffron-infused milk, heavy cream, and rose water, mixing well to combine all the flavors.
  6. Remove from heat and let the mixture cool for a few minutes before transferring it to serving bowls.
  7. Chill in the refrigerator for at least 1 hour to allow it to set slightly.
  8. Before serving, garnish with chopped pistachios and almonds.
