Ingredients

  • Besan (gram flour) - 100 grams
  • Ghee (clarified butter) - 50 grams
  • Sugar - 60 grams
  • Milk - 2 tablespoons
  • Saffron strands - a pinch
  • Cardamom powder - 1/4 teaspoon
  • Chopped nuts (almonds, pistachios) - 20 grams

Steps

  1. In a small bowl, soak the saffron strands in warm milk for about 10 minutes to release their color and flavor.
  2. In a non-stick pan, heat ghee on low flame. Add the besan and roast it while stirring continuously until it turns golden brown and aromatic, about 10-12 minutes.
  3. Add the soaked saffron milk and sugar to the roasted besan, mixing well to combine.
  4. Continue to cook for another 5 minutes until the mixture thickens and begins to leave the sides of the pan.
  5. Remove the mixture from heat and let it cool slightly. Add cardamom powder and chopped nuts, mixing thoroughly.
  6. Once cool enough to handle, grease your palms with a little ghee and shape the mixture into small round balls (ladoos).
  7. Allow the ladoos to set for about 10 minutes before serving.
