- Besan (gram flour) - 100 grams
- Ghee (clarified butter) - 50 grams
- Sugar - 60 grams
- Milk - 2 tablespoons
- Saffron strands - a pinch
- Cardamom powder - 1/4 teaspoon
- Chopped nuts (almonds, pistachios) - 20 grams
Steps
- In a small bowl, soak the saffron strands in warm milk for about 10 minutes to release their color and flavor.
- In a non-stick pan, heat ghee on low flame. Add the besan and roast it while stirring continuously until it turns golden brown and aromatic, about 10-12 minutes.
- Add the soaked saffron milk and sugar to the roasted besan, mixing well to combine.
- Continue to cook for another 5 minutes until the mixture thickens and begins to leave the sides of the pan.
- Remove the mixture from heat and let it cool slightly. Add cardamom powder and chopped nuts, mixing thoroughly.
- Once cool enough to handle, grease your palms with a little ghee and shape the mixture into small round balls (ladoos).
- Allow the ladoos to set for about 10 minutes before serving.
