Ingredients

  • full-fat milk - 500 ml
  • sugar - 100 grams
  • heavy cream - 100 ml
  • kesar (saffron) - 1/4 teaspoon
  • cardamom powder - 1/2 teaspoon
  • pistachios (chopped) - 2 tablespoons
  • almonds (chopped) - 2 tablespoons
  • rose water - 1 teaspoon

Steps

  1. In a saucepan, bring the full-fat milk to a boil, stirring continuously to prevent it from burning.
  2. Once it reaches a boil, reduce the heat and let it simmer for about 15 minutes, or until it thickens slightly.
  3. Dissolve the saffron in 2 tablespoons of warm milk and set aside.
  4. Add the sugar to the simmering milk and stir until fully dissolved.
  5. Stir in the heavy cream, cardamom powder, and the saffron-infused milk into the mixture.
  6. Cook for an additional 5 minutes, then remove from heat and let it cool slightly.
  7. Add the rose water, and mix well.
  8. Pour the mixture into kulfi molds or small cups, and sprinkle chopped pistachios and almonds on top.
  9. Cover the molds with lids or plastic wrap and freeze for at least 6 hours or overnight until completely set.
  10. To serve, dip the molds in warm water for a few seconds to loosen the kulfi, then gently pull it out and enjoy.
