Ingredients
- full-fat milk - 500 ml
- sugar - 100 grams
- heavy cream - 100 ml
- kesar (saffron) - 1/4 teaspoon
- cardamom powder - 1/2 teaspoon
- pistachios (chopped) - 2 tablespoons
- almonds (chopped) - 2 tablespoons
- rose water - 1 teaspoon
Steps
- In a saucepan, bring the full-fat milk to a boil, stirring continuously to prevent it from burning.
- Once it reaches a boil, reduce the heat and let it simmer for about 15 minutes, or until it thickens slightly.
- Dissolve the saffron in 2 tablespoons of warm milk and set aside.
- Add the sugar to the simmering milk and stir until fully dissolved.
- Stir in the heavy cream, cardamom powder, and the saffron-infused milk into the mixture.
- Cook for an additional 5 minutes, then remove from heat and let it cool slightly.
- Add the rose water, and mix well.
- Pour the mixture into kulfi molds or small cups, and sprinkle chopped pistachios and almonds on top.
- Cover the molds with lids or plastic wrap and freeze for at least 6 hours or overnight until completely set.
- To serve, dip the molds in warm water for a few seconds to loosen the kulfi, then gently pull it out and enjoy.
