Ingredients

  • Basmati rice - 50 grams
  • Whole milk - 500 ml
  • Sugar - 50 grams
  • Saffron strands - 1 pinch
  • Cardamom powder - 1/4 teaspoon
  • Chopped pistachios - 10 grams
  • Chopped almonds - 10 grams
  • Rose water - 1 teaspoon
  • Salt - a pinch

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a heavy-bottomed saucepan, bring the whole milk to a boil over medium heat.
  3. Once the milk starts boiling, reduce the heat to low and add the soaked and drained rice. Stir well.
  4. Add the saffron strands, sugar, and a pinch of salt. Mix thoroughly and let it simmer on low heat for about 25-30 minutes, stirring occasionally until the rice is cooked and the kheer thickens.
  5. Add the cardamom powder and rose water, and stir to combine. Cook for an additional 2-3 minutes.
  6. Remove from heat and let it cool slightly. It can be served warm or chilled, garnished with chopped pistachios and almonds.
