- Basmati rice - 50 grams
- Whole milk - 500 ml
- Sugar - 50 grams
- Saffron strands - 1 pinch
- Cardamom powder - 1/4 teaspoon
- Chopped pistachios - 10 grams
- Chopped almonds - 10 grams
- Rose water - 1 teaspoon
- Salt - a pinch
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a heavy-bottomed saucepan, bring the whole milk to a boil over medium heat.
- Once the milk starts boiling, reduce the heat to low and add the soaked and drained rice. Stir well.
- Add the saffron strands, sugar, and a pinch of salt. Mix thoroughly and let it simmer on low heat for about 25-30 minutes, stirring occasionally until the rice is cooked and the kheer thickens.
- Add the cardamom powder and rose water, and stir to combine. Cook for an additional 2-3 minutes.
- Remove from heat and let it cool slightly. It can be served warm or chilled, garnished with chopped pistachios and almonds.
