Ingredients

  • Ghee (clarified butter) - 1 tablespoon
  • Chopped pistachios - for garnish

Steps

  1. Soak the cashew nuts in warm water for about 15 minutes, then drain and blend them into a smooth paste using a little water if necessary.
  2. In a saucepan, combine sugar and water, and bring to a boil until the sugar dissolves completely to form a syrup.
  3. Add the saffron strands to the syrup and let them steep for a minute to release their color and flavor.
  4. Stir in the cashew paste into the syrup, and cook on low heat, stirring continuously until the mixture thickens and starts to leave the sides of the pan.
  5. Add the cardamom powder and ghee to the mixture, and mix well until fully incorporated.
  6. Transfer the mixture to a greased plate or tray, and spread it evenly with a spatula.
  7. Let it cool slightly, then cut into desired shapes and garnish with chopped pistachios.
