Ingredients

  • All-purpose flour - 100 grams
  • Ghee - 30 grams
  • Water - 50 ml
  • Saffron strands - a pinch
  • Powdered sugar - 50 grams
  • Khoya (dried milk) - 50 grams
  • Cardamom powder - 1/4 teaspoon
  • Pistachios (chopped) - 10 grams
  • Oil (for frying) - as needed

Steps

  1. In a bowl, mix all-purpose flour and ghee until it resembles breadcrumbs.
  2. Gradually add water to form a soft dough, cover it with a damp cloth, and let it rest for 20 minutes.
  3. In a small bowl, soak the saffron strands in 1 tablespoon of warm milk for 5 minutes.
  4. In another bowl, combine powdered sugar, khoya, saffron milk, cardamom powder, and chopped pistachios to make the filling.
  5. Divide the rested dough into small balls and roll each ball into a small disc.
  6. Place a spoonful of filling in the center of each disc and fold the edges to seal it, shaping it into a kachori.
  7. Heat oil in a pan over medium heat. Fry the kachoris till golden brown and crispy on both sides.
  8. Remove the kachoris and drain them on paper towels to remove excess oil. Serve warm.
