- All-purpose flour - 100 grams
- Ghee - 30 grams
- Water - 50 ml
- Saffron strands - a pinch
- Powdered sugar - 50 grams
- Khoya (dried milk) - 50 grams
- Cardamom powder - 1/4 teaspoon
- Pistachios (chopped) - 10 grams
- Oil (for frying) - as needed
Steps
- In a bowl, mix all-purpose flour and ghee until it resembles breadcrumbs.
- Gradually add water to form a soft dough, cover it with a damp cloth, and let it rest for 20 minutes.
- In a small bowl, soak the saffron strands in 1 tablespoon of warm milk for 5 minutes.
- In another bowl, combine powdered sugar, khoya, saffron milk, cardamom powder, and chopped pistachios to make the filling.
- Divide the rested dough into small balls and roll each ball into a small disc.
- Place a spoonful of filling in the center of each disc and fold the edges to seal it, shaping it into a kachori.
- Heat oil in a pan over medium heat. Fry the kachoris till golden brown and crispy on both sides.
- Remove the kachoris and drain them on paper towels to remove excess oil. Serve warm.
