- All-purpose flour - 100 grams
- Rice flour - 25 grams
- Cornstarch - 15 grams
- Baking powder - 1/4 teaspoon
- Yogurt - 50 grams
- Water - 100 ml
- Saffron strands - a pinch
- Sugar - 150 grams
- Cardamom powder - 1/4 teaspoon
- Oil for frying - 500 ml
- Rose water - 1 teaspoon
Steps
- In a mixing bowl, combine all-purpose flour, rice flour, cornstarch, baking powder, and yogurt. Gradually add water to form a smooth, thick batter. Let it rest for at least 30 minutes.
- Meanwhile, prepare the sugar syrup by dissolving sugar in water over medium heat. Add saffron strands and cardamom powder, and let it simmer for about 5 minutes until slightly thickened. Stir in rose water and set aside.
- Heat oil in a deep frying pan on medium heat. Fill a piping bag with the rested batter, and cut a small hole at the tip.
- Once the oil is hot, carefully pipe the batter into the oil in a circular spiral shape. Fry until golden brown on both sides, then remove and drain excess oil on paper towels.
- Immediately dip the fried jalebis into the warm sugar syrup for about 30 seconds, ensuring they are well coated, then remove and place on a serving plate.
