Ingredients

  • All-purpose flour - 100 grams
  • Rice flour - 25 grams
  • Cornstarch - 15 grams
  • Baking powder - 1/4 teaspoon
  • Yogurt - 50 grams
  • Water - 100 ml
  • Saffron strands - a pinch
  • Sugar - 150 grams
  • Cardamom powder - 1/4 teaspoon
  • Oil for frying - 500 ml
  • Rose water - 1 teaspoon

Steps

  1. In a mixing bowl, combine all-purpose flour, rice flour, cornstarch, baking powder, and yogurt. Gradually add water to form a smooth, thick batter. Let it rest for at least 30 minutes.
  2. Meanwhile, prepare the sugar syrup by dissolving sugar in water over medium heat. Add saffron strands and cardamom powder, and let it simmer for about 5 minutes until slightly thickened. Stir in rose water and set aside.
  3. Heat oil in a deep frying pan on medium heat. Fill a piping bag with the rested batter, and cut a small hole at the tip.
  4. Once the oil is hot, carefully pipe the batter into the oil in a circular spiral shape. Fry until golden brown on both sides, then remove and drain excess oil on paper towels.
  5. Immediately dip the fried jalebis into the warm sugar syrup for about 30 seconds, ensuring they are well coated, then remove and place on a serving plate.
