Ingredients

  • Semolina - 100 grams
  • Ghee - 50 grams
  • Sugar - 80 grams
  • Water - 300 ml
  • Milk - 100 ml
  • Saffron strands - 10
  • Cardamom powder - 1/2 teaspoon
  • Chopped nuts (almonds, pistachios) - 30 grams

Steps

  1. In a small bowl, soak the saffron strands in 2 tablespoons of warm milk and set aside.
  2. In a saucepan, heat ghee on medium heat and add semolina, stirring continuously until it turns golden brown and fragrant.
  3. In a separate pot, bring water and sugar to a boil until the sugar dissolves completely.
  4. Once the semolina is roasted, carefully add the boiling sugar-water mixture to the pan, stirring continuously to prevent lumps.
  5. Add the remaining milk, soaked saffron with its liquid, and cardamom powder. Mix well and cook on low heat, stirring occasionally until the halwa thickens and the liquid is absorbed.
  6. Add chopped nuts and mix well. Cook for an additional 2-3 minutes, then remove from heat.
  7. Serve warm, garnished with a few additional nuts if desired.
