Ingredients
- Semolina - 100 grams
- Ghee - 50 grams
- Sugar - 80 grams
- Water - 300 ml
- Milk - 100 ml
- Saffron strands - 10
- Cardamom powder - 1/2 teaspoon
- Chopped nuts (almonds, pistachios) - 30 grams
Steps
- In a small bowl, soak the saffron strands in 2 tablespoons of warm milk and set aside.
- In a saucepan, heat ghee on medium heat and add semolina, stirring continuously until it turns golden brown and fragrant.
- In a separate pot, bring water and sugar to a boil until the sugar dissolves completely.
- Once the semolina is roasted, carefully add the boiling sugar-water mixture to the pan, stirring continuously to prevent lumps.
- Add the remaining milk, soaked saffron with its liquid, and cardamom powder. Mix well and cook on low heat, stirring occasionally until the halwa thickens and the liquid is absorbed.
- Add chopped nuts and mix well. Cook for an additional 2-3 minutes, then remove from heat.
- Serve warm, garnished with a few additional nuts if desired.
