Ingredients
- Milk - 500 ml
- Sugar - 100 g
- Ghee - 2 tbsp
- Saffron strands - 1/4 tsp
- Cardamom powder - 1/2 tsp
- Almonds - 10 (sliced)
- Pistachios - 10 (chopped)
- Cornstarch - 2 tbsp
Steps
- In a small bowl, soak the saffron strands in 2 tablespoons of warm milk for about 10 minutes.
- In a heavy-bottomed pan, bring the remaining milk to a boil and then reduce the heat to a simmer.
- Add the sugar, cornstarch (dissolved in 2 tablespoons of milk), and saffron-infused milk to the pan, stirring continuously to avoid lumps.
- Cook the mixture on low heat until it thickens and starts to leave the sides of the pan, about 15-20 minutes.
- Add ghee, cardamom powder, and half of the sliced almonds and chopped pistachios to the mixture, stirring well.
- Grease a flat plate or tray with ghee and pour the mixture onto it, spreading evenly with a spatula.
- Garnish with the remaining almonds and pistachios, pressing them lightly into the surface.
- Allow the burfi to cool for at least 30 minutes, then cut into squares or diamonds and serve.
