Ingredients
- Full-fat milk - 500 ml
- Sugar - 100 g
- Milk powder - 50 g
- Ghee (clarified butter) - 2 tablespoons
- Saffron strands - 1/4 teaspoon
- Cardamom powder - 1/4 teaspoon
- Chopped pistachios - 2 tablespoons
- Chopped almonds - 2 tablespoons
Steps
- In a small bowl, soak the saffron strands in 2 tablespoons of warm milk and set aside.
- In a heavy-bottomed pan, heat the ghee over medium heat and add the full-fat milk.
- Bring the milk to a boil, then reduce the heat and simmer for about 10 minutes, stirring occasionally.
- Add the sugar and milk powder to the pan, mixing well to combine.
- Continue to cook the mixture on low heat, stirring constantly until it thickens and starts to leave the sides of the pan, about 10-15 minutes.
- Incorporate the soaked saffron milk and cardamom powder into the mixture, stirring well.
- Once the mixture has a fudge-like consistency, pour it onto a greased plate or tray and spread it evenly.
- Sprinkle the chopped pistachios and almonds on top, pressing them gently into the surface.
- Allow the barfi to cool completely and set for at least 1 hour before cutting into squares or diamonds.
