Ingredients

  • Full-fat milk - 500 ml
  • Sugar - 100 g
  • Milk powder - 50 g
  • Ghee (clarified butter) - 2 tablespoons
  • Saffron strands - 1/4 teaspoon
  • Cardamom powder - 1/4 teaspoon
  • Chopped pistachios - 2 tablespoons
  • Chopped almonds - 2 tablespoons

Steps

  1. In a small bowl, soak the saffron strands in 2 tablespoons of warm milk and set aside.
  2. In a heavy-bottomed pan, heat the ghee over medium heat and add the full-fat milk.
  3. Bring the milk to a boil, then reduce the heat and simmer for about 10 minutes, stirring occasionally.
  4. Add the sugar and milk powder to the pan, mixing well to combine.
  5. Continue to cook the mixture on low heat, stirring constantly until it thickens and starts to leave the sides of the pan, about 10-15 minutes.
  6. Incorporate the soaked saffron milk and cardamom powder into the mixture, stirring well.
  7. Once the mixture has a fudge-like consistency, pour it onto a greased plate or tray and spread it evenly.
  8. Sprinkle the chopped pistachios and almonds on top, pressing them gently into the surface.
  9. Allow the barfi to cool completely and set for at least 1 hour before cutting into squares or diamonds.
