  • Coconut oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Tomato - 1 medium, chopped
  • Coconut milk - 200 ml
  • Salt - to taste
  • Cilantro - for garnish

Steps

  1. In a large bowl, soak the chopped banana flower in water with a pinch of salt and a few drops of lemon juice for about 10 minutes to reduce bitterness; drain and set aside.
  2. Heat coconut oil in a pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
  3. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic, grated ginger, and slit green chili; cook for another 2 minutes until fragrant.
  5. Add turmeric powder, coriander powder, and garam masala; mix well and cook for 1 minute.
  6. Add the chopped tomato and cook until soft, about 3-4 minutes.
  7. Add the drained banana flower to the pan and stir to combine with the spices.
  8. Pour in the coconut milk and season with salt; simmer for 10-15 minutes, stirring occasionally until the banana flower is tender.
  9. Garnish with fresh cilantro before serving.
