Ingredients
- All-purpose flour - 250 grams
- Active dry yeast - 5 grams
- Sugar - 5 grams
- Salt - 5 grams
- Warm water - 150 ml
- Yogurt - 50 grams
- Oil - 1 tablespoon
- Minced lamb or beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped
- Tomato - 1 medium, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro - a handful, chopped
- Butter - for brushing
Steps
- In a bowl, mix the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture, yogurt, and oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Place it in a lightly oiled bowl, cover, and let it rise for about 1 hour or until doubled in size.
- In a pan, heat a little oil over medium heat. Add the chopped onion and sauté until golden brown. Stir in the garlic, ginger, and green chili, cooking for another minute.
- Add the minced meat to the pan, cooking until browned. Stir in the chopped tomato, cumin powder, coriander powder, garam masala, and salt. Cook until the meat is fully cooked and the mixture is dry. Stir in chopped cilantro and allow to cool.
- Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a ball and let it rest for 10 minutes.
- Preheat a tandoor or a skillet over medium-high heat. Roll out one dough ball into an oval shape, place a spoonful of the keema filling in the center, and fold over to seal. Roll gently to flatten.
- Cook the naan on the skillet or tandoor for about 2-3 minutes on each side until golden brown and cooked through. Brush with melted butter before serving.
- Repeat with the remaining dough and filling. Serve hot with yogurt or chutney.
