Ingredients

  • Chicken breast - 300 grams, diced
  • Greek yogurt - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell pepper - 1 medium, diced
  • Onion - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Fresh mint - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Green chili - 1, finely chopped
  • Cucumber - 1 small, sliced
  • Tomato - 1 medium, diced
  • Lettuce - 1 cup, shredded

Steps

  1. In a bowl, mix Greek yogurt, minced garlic, grated ginger, garam masala, cumin, coriander, turmeric, lemon juice, salt, and black pepper to create the marinade.
  2. Add the diced chicken to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 15 minutes to allow flavors to infuse.
  3. Preheat your grill or a grill pan over medium-high heat. Thread the marinated chicken, bell pepper, and onion onto skewers alternately.
  4. Brush the skewers with olive oil and place them on the grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  5. While the kebabs are grilling, prepare the mint chutney by blending fresh mint, cilantro, green chili, and salt with a little water until smooth.
  6. Serve the kebabs hot on a platter, accompanied by the mint chutney, cucumber slices, diced tomato, and shredded lettuce.
