- Fresh mint - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Green chili - 1, finely chopped
- Cucumber - 1 small, sliced
- Tomato - 1 medium, diced
- Lettuce - 1 cup, shredded
Steps
- In a bowl, mix Greek yogurt, minced garlic, grated ginger, garam masala, cumin, coriander, turmeric, lemon juice, salt, and black pepper to create the marinade.
- Add the diced chicken to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 15 minutes to allow flavors to infuse.
- Preheat your grill or a grill pan over medium-high heat. Thread the marinated chicken, bell pepper, and onion onto skewers alternately.
- Brush the skewers with olive oil and place them on the grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- While the kebabs are grilling, prepare the mint chutney by blending fresh mint, cilantro, green chili, and salt with a little water until smooth.
- Serve the kebabs hot on a platter, accompanied by the mint chutney, cucumber slices, diced tomato, and shredded lettuce.
