Ingredients

  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Cilantro (chopped) - 2 tablespoons
  • Onion (finely chopped) - 1 small
  • Green chili (finely chopped) - 1 small
  • Olive oil - 1 tablespoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Clean the lamb liver thoroughly and cut it into bite-sized pieces.
  2. In a mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt to create the marinade.
  3. Add the lamb liver pieces to the marinade and mix well to coat evenly. Cover and let it marinate in the refrigerator for at least 15 minutes.
  4. Preheat the grill or a grill pan over medium-high heat.
  5. Thread the marinated liver pieces onto the skewers, alternating with pieces of chopped onion and green chili.
  6. Brush the skewers with olive oil to prevent sticking and enhance flavor.
  7. Grill the kebabs for 8-10 minutes, turning occasionally, until the liver is cooked through and slightly charred on the outside.
  8. Remove from the grill and sprinkle with chopped cilantro before serving.
