- Green chili (finely chopped) - 1 small
- Olive oil - 1 tablespoon
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- Clean the lamb liver thoroughly and cut it into bite-sized pieces.
- In a mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt to create the marinade.
- Add the lamb liver pieces to the marinade and mix well to coat evenly. Cover and let it marinate in the refrigerator for at least 15 minutes.
- Preheat the grill or a grill pan over medium-high heat.
- Thread the marinated liver pieces onto the skewers, alternating with pieces of chopped onion and green chili.
- Brush the skewers with olive oil to prevent sticking and enhance flavor.
- Grill the kebabs for 8-10 minutes, turning occasionally, until the liver is cooked through and slightly charred on the outside.
- Remove from the grill and sprinkle with chopped cilantro before serving.
