- Basmati rice - 150 grams
- Chicken or lamb kebabs - 200 grams
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, chopped
- Yogurt - 100 grams
- Ginger-garlic paste - 1 tablespoon
- Biryani masala - 1 tablespoon
- Mint leaves - 10 grams, chopped
- Cilantro - 10 grams, chopped
- Ghee or oil - 2 tablespoons
- Salt - to taste
- Water - 300 milliliters
- Lemon - 1, juiced
- Green chilies - 2, slit
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a bowl, marinate the kebabs with yogurt, ginger-garlic paste, biryani masala, lemon juice, and salt. Let it sit for 15 minutes.
- Heat ghee or oil in a pan over medium heat. Add the sliced onions and sauté until golden brown.
- Add the chopped tomatoes and green chilies to the pan, cooking until the tomatoes soften.
- Stir in the marinated kebabs and cook until they are browned and cooked through, about 10-15 minutes.
- In a separate pot, bring 300 milliliters of water to a boil. Add the soaked rice and a pinch of salt. Cook until the rice is 70% done, then drain the excess water.
- Layer half of the partially cooked rice over the kebabs in the pan. Sprinkle half of the chopped mint and cilantro on top.
- Add the remaining rice and top with the rest of the mint and cilantro. Cover the pan tightly and cook on low heat for 15-20 minutes to allow the flavors to meld.
- Once done, gently fluff the biryani with a fork and serve hot, garnished with additional cilantro if desired.
