Ingredients

  • Basmati rice - 150 grams
  • Chicken or lamb kebabs - 200 grams
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Yogurt - 100 grams
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 1 tablespoon
  • Mint leaves - 10 grams, chopped
  • Cilantro - 10 grams, chopped
  • Ghee or oil - 2 tablespoons
  • Salt - to taste
  • Water - 300 milliliters
  • Lemon - 1, juiced
  • Green chilies - 2, slit

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a bowl, marinate the kebabs with yogurt, ginger-garlic paste, biryani masala, lemon juice, and salt. Let it sit for 15 minutes.
  3. Heat ghee or oil in a pan over medium heat. Add the sliced onions and sauté until golden brown.
  4. Add the chopped tomatoes and green chilies to the pan, cooking until the tomatoes soften.
  5. Stir in the marinated kebabs and cook until they are browned and cooked through, about 10-15 minutes.
  6. In a separate pot, bring 300 milliliters of water to a boil. Add the soaked rice and a pinch of salt. Cook until the rice is 70% done, then drain the excess water.
  7. Layer half of the partially cooked rice over the kebabs in the pan. Sprinkle half of the chopped mint and cilantro on top.
  8. Add the remaining rice and top with the rest of the mint and cilantro. Cover the pan tightly and cook on low heat for 15-20 minutes to allow the flavors to meld.
  9. Once done, gently fluff the biryani with a fork and serve hot, garnished with additional cilantro if desired.
