- Tomato, diced - 50 grams
- Spinach, chopped - 30 grams

- Lemon juice - 1 tablespoon
- Olive oil (for sautéing) - 1 tablespoon
- Dairy-free cheese (shredded) - 100 grams
Steps
- In a mixing bowl, combine whole wheat flour, warm water, olive oil, and salt to make a smooth dough. Knead for 5 minutes and let it rest for 15 minutes.
- In another bowl, mix chickpea flour, turmeric, cumin, red chili powder, and water to form a batter. Let it rest for 10 minutes.
- Heat olive oil in a pan over medium heat. Sauté onions until translucent, then add bell peppers, tomatoes, and spinach. Cook until softened, about 5 minutes.
- Add cilantro and lemon juice to the sautéed vegetables and mix well. Remove from heat.
- Divide the dough into two equal portions and roll each into a thin circle (about 10 inches in diameter).
- Heat a skillet over medium-high heat and cook each rolled dough for about 2 minutes on each side until lightly golden and cooked through.
- Spread the chickpea batter evenly over each cooked dough. Top with the sautéed vegetables and sprinkle shredded dairy-free cheese on top.
- Transfer the pizzas back to the skillet, cover, and cook on low heat for 5-7 minutes, or until the cheese has melted.
