Ingredients

  • Whole wheat paratha - 2
  • Potato - 200 grams, boiled and mashed
  • Carrot - 50 grams, grated
  • Green peas - 50 grams, boiled
  • Onion - 1 small, finely chopped
  • Ginger-garlic paste - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Oil - 2 tablespoons (for cooking)
  • Vegan mayonnaise - 2 tablespoons
  • Green chutney - 2 tablespoons
  • Lettuce leaves - 2

Steps

  1. In a bowl, combine the mashed potato, grated carrot, boiled peas, chopped onion, ginger-garlic paste, garam masala, red chili powder, turmeric powder, salt, coriander leaves, and lemon juice. Mix well to form a dough-like mixture.
  2. Divide the mixture into two equal portions and shape them into burger patties.
  3. Heat 1 tablespoon of oil in a non-stick pan over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown and crispy. Remove and set aside.
  4. In the same pan, lightly toast the whole wheat parathas for 1-2 minutes on each side until warm and slightly crispy.
  5. Spread 1 tablespoon of vegan mayonnaise on each paratha. Place a lettuce leaf on top, followed by the cooked patty, and drizzle with green chutney.
  6. Roll the paratha around the filling, securing it as a wrap. Slice in half and serve immediately with extra chutney on the side.
