Ingredients
- Chicken - 300 grams, cut into pieces
- Yogurt - 200 grams, whisked
- Onion - 1 medium, thinly sliced
- Ginger paste - 1 tablespoon
- Garlic paste - 1 tablespoon
- Green cardamom - 4 pods
- Cloves - 4
- Cinnamon stick - 1 inch
- Bay leaf - 1
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Water - 500 ml
- Coriander leaves - for garnish
Steps
- In a large pot, heat 1 tablespoon of oil over medium heat. Add the sliced onions and sauté until golden brown.
- Add ginger and garlic paste, stirring for 1-2 minutes until fragrant.
- Add the chicken pieces and cook until they are lightly browned on all sides.
- Stir in the turmeric, cumin powder, salt, and the whole spices (cardamom, cloves, cinnamon, bay leaf). Mix well.
- Pour in the water, bring to a boil, then reduce to a simmer. Cover and cook for about 20 minutes, or until the chicken is tender.
- In a bowl, slowly whisk the yogurt to prevent curdling, then gradually add a ladle of the hot chicken broth to temper the yogurt. Mix well.
- Once tempered, add the yogurt mixture back into the pot, stirring continuously. Simmer for an additional 5-7 minutes.
- Sprinkle garam masala and adjust seasoning if necessary. Cook for another 2 minutes.
- Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
