Ingredients

  • Chicken - 300 grams, cut into pieces
  • Yogurt - 200 grams, whisked
  • Onion - 1 medium, thinly sliced
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Green cardamom - 4 pods
  • Cloves - 4
  • Cinnamon stick - 1 inch
  • Bay leaf - 1
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Water - 500 ml
  • Coriander leaves - for garnish

Steps

  1. In a large pot, heat 1 tablespoon of oil over medium heat. Add the sliced onions and sauté until golden brown.
  2. Add ginger and garlic paste, stirring for 1-2 minutes until fragrant.
  3. Add the chicken pieces and cook until they are lightly browned on all sides.
  4. Stir in the turmeric, cumin powder, salt, and the whole spices (cardamom, cloves, cinnamon, bay leaf). Mix well.
  5. Pour in the water, bring to a boil, then reduce to a simmer. Cover and cook for about 20 minutes, or until the chicken is tender.
  6. In a bowl, slowly whisk the yogurt to prevent curdling, then gradually add a ladle of the hot chicken broth to temper the yogurt. Mix well.
  7. Once tempered, add the yogurt mixture back into the pot, stirring continuously. Simmer for an additional 5-7 minutes.
  8. Sprinkle garam masala and adjust seasoning if necessary. Cook for another 2 minutes.
  9. Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
