Ingredients

  • Ground lamb - 250 grams
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies - 2, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Kashmiri red chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Cooking oil - for brushing
  • Skewers - 2 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a mixing bowl, combine the ground lamb, finely chopped onion, ginger-garlic paste, green chilies, cilantro, garam masala, cumin powder, Kashmiri red chili powder, salt, black pepper, and lemon juice.
  2. Mix the ingredients thoroughly until well combined. You can use your hands to ensure the mixture is cohesive.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  4. Preheat a grill or frying pan over medium heat and lightly brush the skewers with cooking oil.
  5. Divide the chilled mixture into two equal portions and mold each portion around a skewer, pressing firmly to ensure they hold their shape.
  6. Place the skewers on the grill or frying pan and cook for about 5-7 minutes on each side, or until the kebabs are browned and cooked through.
  7. Once cooked, remove from the heat and let them rest for a few minutes before serving.
  8. Serve hot with mint chutney and naan or rice.
