- Mustard greens - 200 grams
- Spinach - 100 grams
- Fenugreek leaves - 50 grams
- Onion - 1 medium, finely chopped
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green chili - 1, slit
- Yogurt - 100 grams, whisked
- Cumin seeds - 1 teaspoon
- Turmeric powder - ½ teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Water - 100 ml
Steps
- Wash and chop the mustard greens, spinach, and fenugreek leaves, then set aside.
- In a large pan, heat the oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion to the pan and sauté until translucent.
- Stir in the minced garlic, grated ginger, and slit green chili, cooking for another 2 minutes until fragrant.
- Add the chopped greens to the pan, along with turmeric powder and salt. Stir well to combine.
- Cover the pan and cook for about 10 minutes, stirring occasionally until the greens are wilted and tender.
- Add water to the pan, if necessary, to achieve a desired consistency, and let it simmer for another 5 minutes.
- Reduce the heat to low, and gently fold in the whisked yogurt, ensuring it doesn't curdle. Cook for an additional 3-4 minutes.
- Sprinkle garam masala on top, mix well, and remove from heat.
- Serve hot with rice or gluten-free bread.
