Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely sliced
  • Tomato - 1 medium, chopped
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Yogurt - 100 grams
  • Kashmiri red chili powder - 1 tablespoon
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Cinnamon stick - 1 inch
  • Cardamom pods - 3
  • Cloves - 3
  • Bay leaf - 1
  • Salt - to taste
  • Cooking oil - 3 tablespoons
  • Water - 500 ml
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a heavy-bottomed pot over medium heat. Add sliced onions and sauté until golden brown.
  2. Add ginger and garlic paste, and cook for 2-3 minutes until fragrant.
  3. Stir in the cubed lamb and cook until browned on all sides.
  4. Add chopped tomatoes, Kashmiri red chili powder, cumin powder, and salt. Cook for another 5 minutes until tomatoes soften.
  5. Lower the heat and mix in the yogurt, ensuring it's well combined. Cook for 5 minutes.
  6. Add the cinnamon stick, cardamom pods, cloves, and bay leaf. Pour in the water and bring to a boil.
  7. Reduce the heat to low, cover the pot, and let it simmer for 30-35 minutes until the lamb is tender.
  8. While the lamb is cooking, rinse the basmati rice under cold water until the water runs clear, then soak for 30 minutes.
  9. In a separate pot, bring 300 ml of water to a boil. Add the soaked rice and a pinch of salt. Cook until the rice is 70% done, then drain.
  10. Once the lamb is tender, add the partially cooked rice to the pot. Gently fluff the rice with the lamb gravy, cover, and cook on low heat for another 10 minutes.
  11. Garnish with fresh coriander leaves before serving.
