- Lamb shoulder, boneless - 300 grams
- Greek yogurt - 100 grams
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic, minced - 2 cloves
- Ginger, grated - 1 inch piece
- Kashmiri red chili powder - 1 tablespoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - ½ teaspoon
- Salt - to taste
- Vegetable oil - 2 tablespoons
- Water - 200 ml
- Fresh cilantro, chopped - for garnish
Steps
- Heat the vegetable oil in a heavy-bottomed pan over medium heat.
- Add the chopped onions and sauté until golden brown, about 8-10 minutes.
- Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
- Add the lamb pieces to the pan, cooking until they are browned on all sides, about 5-7 minutes.
- In a small bowl, mix the Greek yogurt with Kashmiri red chili powder, cumin powder, coriander powder, turmeric powder, and salt.
- Lower the heat and add the yogurt mixture to the lamb, stirring well to coat the meat evenly.
- Pour in the water, bring to a simmer, then cover and cook on low heat for about 40 minutes, or until the lamb is tender.
- Once cooked, sprinkle garam masala over the dish and stir gently.
- Garnish with fresh cilantro before serving.
