Ingredients

  • Kidney beans - 200 grams (soaked overnight)
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 inch piece, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Cilantro - for garnish
  • Water - 4 cups (for cooking beans)
  • Water - 300 ml (for cooking rice)
  • Oil - 2 tablespoons

Steps

  1. Rinse and soak the kidney beans in water overnight. Drain and set aside.
  2. In a pressure cooker, heat the oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onions and sauté until golden brown. Then, add the grated ginger, minced garlic, and slit green chili, and cook for another 2 minutes.
  4. Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the oil separates.
  5. Add the soaked kidney beans and 4 cups of water. Close the pressure cooker lid and cook on high heat for 3-4 whistles. Reduce heat and cook for an additional 10 minutes. Once done, release steam and open the lid.
  6. In a separate pot, wash the basmati rice until the water runs clear. In 300 ml of water, bring the rice to a boil, then reduce the heat, cover, and let it simmer until the rice is cooked and water is absorbed (about 15 minutes).
  7. Once the rajma is cooked, stir in garam masala and adjust salt if necessary. Let it simmer for another 5 minutes.
  8. Serve the rajma hot over the fluffy basmati rice, garnished with fresh cilantro.
