Ingredients
- Brown rice flour - 200 grams
- Tapioca flour - 50 grams
- Psyllium husk - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1 teaspoon
- Yogurt - 100 grams
- Warm water - 150 ml
- Olive oil - 1 tablespoon
- Chopped fresh coriander - 2 tablespoons
- Chopped walnuts - 30 grams
- Cumin seeds - 1/2 teaspoon
- Black sesame seeds - 1 tablespoon
- Nigella seeds - 1/2 teaspoon
Steps
- In a large mixing bowl, combine the brown rice flour, tapioca flour, psyllium husk, baking powder, and salt. Mix well until combined.
- Add the yogurt and warm water to the dry ingredients. Mix with your hands until a dough begins to form. If the dough feels too dry, add small amounts of warm water as needed.
- Knead the dough for about 5 minutes until it becomes smooth and elastic. Let it rest for 15 minutes, covered with a damp cloth.
- After resting, divide the dough into 4 equal portions. Roll each portion into a ball and then flatten into a disc about 1/2 cm thick.
- Sprinkle chopped coriander, walnuts, cumin seeds, black sesame seeds, and nigella seeds on one side of each disc, and fold over to seal the filling inside. Gently flatten again to form an even disc.
- Heat a non-stick skillet or tava over medium heat. Lightly brush the skillet with olive oil.
- Cook each naan for about 3-4 minutes on one side until bubbles form and it turns golden brown. Flip and cook for another 2-3 minutes on the other side.
- Remove from the skillet and keep warm in a clean kitchen towel. Repeat for remaining dough discs.
- Serve hot with your favorite curry or raita.
