- Basmati rice - 1 cup
- Water - 2 cups
- Potato - 1 medium, diced
- Carrot - 1 medium, diced
- Green peas - 1/2 cup
- Onion - 1 medium, thinly sliced
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 tsp
- Cinnamon stick - 1 inch
- Green cardamom - 2 pods
- Cloves - 2
- Turmeric powder - 1/2 tsp
- Red chili powder - 1/2 tsp
- Salt - to taste
- Vegetable oil - 2 tbsp
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
- In a heavy-bottomed pot, heat vegetable oil over medium heat. Add cumin seeds, cinnamon stick, green cardamom, and cloves. Sauté for a minute until fragrant.
- Add the sliced onions and sauté until they turn golden brown. Then add grated ginger and minced garlic, cooking for another minute.
- Stir in the diced potatoes, carrots, turmeric powder, red chili powder, and salt. Cook for 5-7 minutes until the vegetables start to soften.
- Add the soaked and drained rice to the pot, gently mixing it with the vegetables and spices.
- Pour in the water and bring it to a boil. Lower the heat, cover the pot with a tight-fitting lid, and simmer for 15-20 minutes until the rice is fully cooked and the water is absorbed.
- Once cooked, turn off the heat and let it sit covered for another 5 minutes. Fluff the rice gently with a fork.
- Garnish with fresh coriander leaves and serve hot.
