Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Potato - 1 medium, diced
  • Carrot - 1 medium, diced
  • Green peas - 1/2 cup
  • Onion - 1 medium, thinly sliced
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 tsp
  • Cinnamon stick - 1 inch
  • Green cardamom - 2 pods
  • Cloves - 2
  • Turmeric powder - 1/2 tsp
  • Red chili powder - 1/2 tsp
  • Salt - to taste
  • Vegetable oil - 2 tbsp
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. In a heavy-bottomed pot, heat vegetable oil over medium heat. Add cumin seeds, cinnamon stick, green cardamom, and cloves. Sauté for a minute until fragrant.
  3. Add the sliced onions and sauté until they turn golden brown. Then add grated ginger and minced garlic, cooking for another minute.
  4. Stir in the diced potatoes, carrots, turmeric powder, red chili powder, and salt. Cook for 5-7 minutes until the vegetables start to soften.
  5. Add the soaked and drained rice to the pot, gently mixing it with the vegetables and spices.
  6. Pour in the water and bring it to a boil. Lower the heat, cover the pot with a tight-fitting lid, and simmer for 15-20 minutes until the rice is fully cooked and the water is absorbed.
  7. Once cooked, turn off the heat and let it sit covered for another 5 minutes. Fluff the rice gently with a fork.
  8. Garnish with fresh coriander leaves and serve hot.
