Ingredients

  • Basmati rice - 200 grams
  • Mixed vegetables (carrots, peas, beans) - 150 grams
  • Onion - 1 medium, thinly sliced
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Yogurt - 100 grams
  • Ghee (clarified butter) - 2 tablespoons
  • Bay leaf - 1
  • Cinnamon stick - 1 inch
  • Cloves - 4
  • Green cardamom - 3
  • Salt - to taste
  • Water - 400 ml
  • Saffron - a pinch, soaked in 1 tablespoon warm milk
  • Kashmiri red chili powder - 1 teaspoon
  • Cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a heavy-bottomed pot, heat the ghee on medium heat and add the sliced onions. Sauté until they turn golden brown.
  3. Add the grated ginger and minced garlic to the pot, cooking for an additional minute until fragrant.
  4. Incorporate the mixed vegetables and sauté for 5-7 minutes until they are slightly tender.
  5. Stir in the yogurt, kashmiri red chili powder, and salt, cooking for another 2-3 minutes.
  6. Drain the soaked rice and add it to the pot, followed by the bay leaf, cinnamon stick, cloves, and green cardamom.
  7. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot with a tight lid, and let it simmer for 20 minutes.
  8. After 20 minutes, remove the pot from heat but keep it covered for another 10 minutes to allow the rice to finish cooking.
  9. Gently fluff the rice with a fork and drizzle the saffron-infused milk over the top. Garnish with chopped cilantro before serving.
