- Yogurt - 150 grams

- Ginger-garlic paste - 1 tablespoon
- Kashmiri red chili powder - 2 teaspoons
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Cooking oil - 3 tablespoons
- Water - 200 ml
- Cardamom pods - 4
- Cinnamon stick - 1 inch
- Cloves - 4
- Bay leaf - 1
- Fresh coriander leaves (for garnish) - a handful
Steps
- In a mixing bowl, marinate the mutton pieces with yogurt, ginger-garlic paste, Kashmiri red chili powder, turmeric powder, and salt. Let it sit for at least 30 minutes.
- In a heavy-bottomed pot, heat the cooking oil over medium heat. Add the sliced onions and sauté until they turn golden brown.
- Add the marinated mutton to the pot and sear the meat for about 10 minutes, stirring frequently to ensure even cooking.
- Add the cardamom pods, cinnamon stick, cloves, and bay leaf to the pot, stirring to combine with the mutton.
- Pour in 200 ml of water, cover the pot with a lid, and let it simmer on low heat for about 1.5 hours, or until the mutton is tender. Stir occasionally and add more water if needed to prevent sticking.
- Once the mutton is cooked and the gravy is thickened, sprinkle garam masala on top and mix well.
- Garnish with fresh coriander leaves before serving hot with naan or rice.
