Ingredients

  • Baby potatoes - 300 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 inch piece, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Kashmiri red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Vegetable stock - 750 milliliters
  • Fresh coriander leaves - a handful, chopped
  • Salt - to taste
  • Oil - 1 tablespoon

Steps

  1. Wash and boil the baby potatoes in salted water until tender but firm, about 10-15 minutes. Drain and set aside.
  2. In a large pot, heat the oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onions to the pot and sauté until they turn golden brown.
  4. Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another 2 minutes until fragrant.
  5. Add the pureed tomato, Kashmiri red chili powder, turmeric powder, and salt. Cook until the oil separates from the mixture, about 5 minutes.
  6. Add the boiled baby potatoes to the pot and gently mix them with the spices.
  7. Pour in the vegetable stock and bring the mixture to a boil. Reduce heat and let it simmer for 15-20 minutes to allow flavors to meld.
  8. Add garam masala and mix well. Simmer for an additional 5 minutes.
  9. Remove from heat and garnish with fresh coriander leaves before serving.
