- Baby potatoes - 300 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger - 1 inch piece, grated
- Garlic - 3 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Kashmiri red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Vegetable stock - 750 milliliters
- Fresh coriander leaves - a handful, chopped
- Salt - to taste
- Oil - 1 tablespoon
Steps
- Wash and boil the baby potatoes in salted water until tender but firm, about 10-15 minutes. Drain and set aside.
- In a large pot, heat the oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions to the pot and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another 2 minutes until fragrant.
- Add the pureed tomato, Kashmiri red chili powder, turmeric powder, and salt. Cook until the oil separates from the mixture, about 5 minutes.
- Add the boiled baby potatoes to the pot and gently mix them with the spices.
- Pour in the vegetable stock and bring the mixture to a boil. Reduce heat and let it simmer for 15-20 minutes to allow flavors to meld.
- Add garam masala and mix well. Simmer for an additional 5 minutes.
- Remove from heat and garnish with fresh coriander leaves before serving.
