- Basmati rice - 1 cup
- Baby potatoes - 250 grams
- Onion - 1 medium, thinly sliced
- Ginger-garlic paste - 1 tablespoon
- Green chilies - 2, slit
- Cumin seeds - 1 teaspoon
- Cardamom pods - 2
- Cloves - 2
- Cinnamon stick - 1 inch
- Bay leaf - 1
- Yogurt - 2 tablespoons
- Garam masala - 1 teaspoon
- Kashmiri red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Cilantro - for garnish
- Water - 2 cups
- Ghee or oil - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Boil the baby potatoes in salted water until fork-tender, about 10 minutes. Drain and let them cool, then peel and prick them with a fork.
- In a large pot, heat ghee or oil over medium heat. Add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for a minute until fragrant.
- Add the sliced onions and sauté until they turn golden brown. Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes.
- Add the yogurt, garam masala, Kashmiri red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes until the spices are well combined.
- Add the pricked baby potatoes to the pot, gently coating them with the spice mixture. Cook for 5 minutes on low heat, stirring occasionally.
- Add the soaked and drained basmati rice to the pot, followed by 2 cups of water. Stir gently to combine, being careful not to break the rice.
- Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is cooked and water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice gently with a fork, then garnish with chopped cilantro before serving.
