Kashmiri Dum Aloo Pulao

Ingredients

  • Basmati rice - 1 cup
  • Baby potatoes - 250 grams
  • Onion - 1 medium, thinly sliced
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies - 2, slit
  • Cumin seeds - 1 teaspoon
  • Cardamom pods - 2
  • Cloves - 2
  • Cinnamon stick - 1 inch
  • Bay leaf - 1
  • Yogurt - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Kashmiri red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Cilantro - for garnish
  • Water - 2 cups
  • Ghee or oil - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Boil the baby potatoes in salted water until fork-tender, about 10 minutes. Drain and let them cool, then peel and prick them with a fork.
  3. In a large pot, heat ghee or oil over medium heat. Add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for a minute until fragrant.
  4. Add the sliced onions and sauté until they turn golden brown. Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes.
  5. Add the yogurt, garam masala, Kashmiri red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes until the spices are well combined.
  6. Add the pricked baby potatoes to the pot, gently coating them with the spice mixture. Cook for 5 minutes on low heat, stirring occasionally.
  7. Add the soaked and drained basmati rice to the pot, followed by 2 cups of water. Stir gently to combine, being careful not to break the rice.
  8. Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is cooked and water is absorbed.
  9. Remove from heat and let it sit covered for 5 minutes. Fluff the rice gently with a fork, then garnish with chopped cilantro before serving.
