- Urad dal (split black gram) - 1 cup
- Green chilies - 2, finely chopped
- Ginger - 1 inch piece, grated
- Curry leaves - 10, finely chopped
- Onion - 1 small, finely chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Rice flour - 2 tablespoons
- Baking soda - 1/4 teaspoon
- Oil - for deep frying
Steps
- Soak urad dal in water for 4-6 hours or overnight.
- Drain the soaked dal and transfer it to a blender. Blend it to a coarse paste, adding a little water if necessary.
- In a mixing bowl, combine the blended dal, green chilies, ginger, curry leaves, onion, salt, black pepper, rice flour, and baking soda. Mix well until all ingredients are incorporated.
- Heat oil in a deep frying pan over medium heat.
- Wet your hands and take a small amount of the mixture, shaping it into a round disc (about 2 inches in diameter).
- Carefully slide the shaped vadas into the hot oil, frying them in batches. Fry until golden brown and crispy, about 3-4 minutes on each side.
- Remove the vadas using a slotted spoon and drain them on paper towels to absorb excess oil.
- Serve hot with coconut chutney and sambar.
