Ingredients

  • Urad dal (split black gram) - 1 cup
  • Green chilies - 2, finely chopped
  • Ginger - 1 inch piece, grated
  • Curry leaves - 10, finely chopped
  • Onion - 1 small, finely chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Rice flour - 2 tablespoons
  • Baking soda - 1/4 teaspoon
  • Oil - for deep frying

Steps

  1. Soak urad dal in water for 4-6 hours or overnight.
  2. Drain the soaked dal and transfer it to a blender. Blend it to a coarse paste, adding a little water if necessary.
  3. In a mixing bowl, combine the blended dal, green chilies, ginger, curry leaves, onion, salt, black pepper, rice flour, and baking soda. Mix well until all ingredients are incorporated.
  4. Heat oil in a deep frying pan over medium heat.
  5. Wet your hands and take a small amount of the mixture, shaping it into a round disc (about 2 inches in diameter).
  6. Carefully slide the shaped vadas into the hot oil, frying them in batches. Fry until golden brown and crispy, about 3-4 minutes on each side.
  7. Remove the vadas using a slotted spoon and drain them on paper towels to absorb excess oil.
  8. Serve hot with coconut chutney and sambar.
