- Paneer - 200 grams
- Bell pepper (mixed colors) - 1 medium, diced
- Red onion - 1 medium, diced
- Cherry tomatoes - 8, halved
- Greek yogurt - 100 grams
- Ginger-garlic paste - 1 tablespoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Olive oil - 1 tablespoon
- Fresh coriander leaves - for garnish
Steps
- In a bowl, combine Greek yogurt, ginger-garlic paste, garam masala, turmeric powder, red chili powder, cumin powder, lemon juice, and salt to create a marinade.
- Cut the paneer into cubes and add it to the marinade, along with the diced bell pepper, red onion, and halved cherry tomatoes. Mix well to coat all the ingredients.
- Cover the bowl and let it marinate in the refrigerator for at least 15 minutes.
- Preheat a grill or grill pan over medium heat and brush with olive oil.
- Thread the marinated paneer and vegetables onto skewers, alternating between paneer and vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally until the paneer is golden and the vegetables are slightly charred.
- Remove from the grill and garnish with fresh coriander leaves. Serve hot with mint chutney.
