- Basmati rice - 1 cup
- Water - 2 cups
- Oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Urad dal (split black gram) - 1 tablespoon
- Chana dal (split chickpeas) - 1 tablespoon
- Dried red chilies - 2
- Curry leaves - 10-12 leaves
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Green beans - 100 grams, chopped
- Peas - 50 grams, fresh or frozen
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large pot, heat the oil over medium heat. Add the mustard seeds and let them splutter.
- Add the cumin seeds, urad dal, chana dal, dried red chilies, and curry leaves. Sauté for a minute until fragrant.
- Stir in the chopped onion and sauté until translucent.
- Add the diced carrot, chopped green beans, and peas to the pot. Cook for 3-4 minutes until the vegetables are slightly tender.
- Add the turmeric powder and salt to the pot, mixing well to incorporate the spices.
- Drain the soaked rice and add it to the pot. Stir gently to mix with the vegetables and spices.
- Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
