Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Urad dal (split black gram) - 1 tablespoon
  • Chana dal (split chickpeas) - 1 tablespoon
  • Dried red chilies - 2
  • Curry leaves - 10-12 leaves
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Green beans - 100 grams, chopped
  • Peas - 50 grams, fresh or frozen
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large pot, heat the oil over medium heat. Add the mustard seeds and let them splutter.
  3. Add the cumin seeds, urad dal, chana dal, dried red chilies, and curry leaves. Sauté for a minute until fragrant.
  4. Stir in the chopped onion and sauté until translucent.
  5. Add the diced carrot, chopped green beans, and peas to the pot. Cook for 3-4 minutes until the vegetables are slightly tender.
  6. Add the turmeric powder and salt to the pot, mixing well to incorporate the spices.
  7. Drain the soaked rice and add it to the pot. Stir gently to mix with the vegetables and spices.
  8. Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
  9. Once cooked, remove from heat and let it sit covered for 5 minutes.
  10. Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
