Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Bay leaf - 1
  • Cinnamon stick - 1 inch
  • Cloves - 2
  • Cardamom pods - 2
  • Onion - 1 medium, thinly sliced
  • Ginger-garlic paste - 1 teaspoon
  • Green chili - 1, slit
  • Mixed vegetables (carrot, peas, beans) - 1 cup, chopped
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves - a handful, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pan or pot, heat the oil over medium heat. Add mustard seeds and let them splutter.
  3. Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.
  4. Add the sliced onion and sauté until they turn golden brown.
  5. Stir in the ginger-garlic paste and green chili, cooking for another minute.
  6. Add the chopped mixed vegetables and sauté for 2-3 minutes until they soften slightly.
  7. Drain the soaked rice and add it to the pan, stirring gently to mix with the vegetables and spices.
  8. Add turmeric powder, garam masala, and salt to taste, then pour in the water. Stir well and bring to a boil.
  9. Once it boils, reduce the heat to low, cover the pan, and let it cook for about 15 minutes or until the rice is cooked and the water is absorbed.
  10. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, sprinkle with chopped coriander leaves and drizzle lemon juice before serving.
