Ingredients
- Basmati rice - 1 cup
- Water - 2 cups
- Oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Bay leaf - 1
- Cinnamon stick - 1 inch
- Cloves - 2
- Cardamom pods - 2
- Onion - 1 medium, thinly sliced
- Ginger-garlic paste - 1 teaspoon
- Green chili - 1, slit
- Mixed vegetables (carrot, peas, beans) - 1 cup, chopped
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Coriander leaves - a handful, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pan or pot, heat the oil over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.
- Add the sliced onion and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chili, cooking for another minute.
- Add the chopped mixed vegetables and sauté for 2-3 minutes until they soften slightly.
- Drain the soaked rice and add it to the pan, stirring gently to mix with the vegetables and spices.
- Add turmeric powder, garam masala, and salt to taste, then pour in the water. Stir well and bring to a boil.
- Once it boils, reduce the heat to low, cover the pan, and let it cook for about 15 minutes or until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, sprinkle with chopped coriander leaves and drizzle lemon juice before serving.
