Ingredients

  • Basmati rice - 100 grams
  • Moong dal (split yellow lentils) - 50 grams
  • Carrot (chopped) - 1 medium
  • Green beans (chopped) - 50 grams
  • Potato (cubed) - 1 small
  • Ghee - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Water - 500 ml
  • Coriander leaves (chopped) - for garnish

Steps

  1. Rinse the basmati rice and moong dal under cold water until the water runs clear. Soak them in water for 15 minutes, then drain.
  2. Heat ghee in a pressure cooker over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  3. Add the chopped carrots, green beans, and potatoes to the cooker. Sauté for about 3-4 minutes until the vegetables are slightly tender.
  4. Stir in the soaked rice and moong dal, along with turmeric powder, garam masala, and salt. Mix well to combine all the ingredients.
  5. Pour in 500 ml of water and stir gently. Close the lid of the pressure cooker and cook for 2 whistles on medium heat.
  6. Once done, turn off the heat and let the pressure release naturally. Open the lid and fluff the khichdi with a fork.
  7. Serve hot, garnished with chopped coriander leaves.
