- Basmati rice - 100 grams
- Moong dal (split yellow lentils) - 50 grams
- Carrot (chopped) - 1 medium
- Green beans (chopped) - 50 grams
- Potato (cubed) - 1 small
- Ghee - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Water - 500 ml
- Coriander leaves (chopped) - for garnish
Steps
- Rinse the basmati rice and moong dal under cold water until the water runs clear. Soak them in water for 15 minutes, then drain.
- Heat ghee in a pressure cooker over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add the chopped carrots, green beans, and potatoes to the cooker. Sauté for about 3-4 minutes until the vegetables are slightly tender.
- Stir in the soaked rice and moong dal, along with turmeric powder, garam masala, and salt. Mix well to combine all the ingredients.
- Pour in 500 ml of water and stir gently. Close the lid of the pressure cooker and cook for 2 whistles on medium heat.
- Once done, turn off the heat and let the pressure release naturally. Open the lid and fluff the khichdi with a fork.
- Serve hot, garnished with chopped coriander leaves.
