- Chicken thighs - 300 grams, boneless and skinless, cut into bite-sized pieces
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Coconut oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon (adjust to taste)
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - a handful, chopped
- Water - 250 milliliters
Steps
- Heat the coconut oil in a large pan over medium heat.
- Add mustard seeds and cumin seeds, and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger and minced garlic, and cook for another minute until fragrant.
- Add the pureed tomato and cook until the oil starts to separate from the mixture.
- Mix in the turmeric powder, red chili powder, coriander powder, and salt. Cook for 2-3 minutes.
- Add the chicken pieces and stir well to coat them with the spice mixture. Cook for about 5-7 minutes until the chicken is browned.
- Pour in the water, bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, until the chicken is cooked through.
- Stir in the garam masala and cook for another 2 minutes.
- Garnish with chopped coriander leaves before serving.
