  • Tomato (chopped) - 1 medium
  • Green chilies (slit) - 2
  • Curry leaves - 10-12
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro (chopped) - 2 tablespoons
  • Water - 1 cup

Steps

  1. Heat coconut oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
  2. Stir in ginger-garlic paste and sauté for another 2 minutes until aromatic.
  3. Add chopped tomatoes and green chilies, cooking until the tomatoes break down and become soft.
  4. Mix in turmeric, red chili powder, coriander powder, and salt. Cook for 2-3 minutes until the spices are well incorporated.
  5. Add the chicken pieces to the pan, stirring to coat them with the spice mixture. Cook for 5-7 minutes until the chicken is browned.
  6. Pour in water and add curry leaves. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes until the chicken is fully cooked.
  7. Sprinkle garam masala and chopped cilantro over the chicken. Stir well and cook for an additional 2-3 minutes.
  8. Serve hot with rice or gluten-free bread.
