- Green chilies (slit) - 2
- Curry leaves - 10-12
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro (chopped) - 2 tablespoons
- Water - 1 cup
Steps
- Heat coconut oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and sauté for another 2 minutes until aromatic.
- Add chopped tomatoes and green chilies, cooking until the tomatoes break down and become soft.
- Mix in turmeric, red chili powder, coriander powder, and salt. Cook for 2-3 minutes until the spices are well incorporated.
- Add the chicken pieces to the pan, stirring to coat them with the spice mixture. Cook for 5-7 minutes until the chicken is browned.
- Pour in water and add curry leaves. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes until the chicken is fully cooked.
- Sprinkle garam masala and chopped cilantro over the chicken. Stir well and cook for an additional 2-3 minutes.
- Serve hot with rice or gluten-free bread.
