- Grated carrot - 1/4 cup
- Chopped onion - 1/4 cup
- Green chili (finely chopped) - 1 small
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Water - as needed
- Oil - for cooking
Steps
- In a mixing bowl, combine whole wheat flour, chickpea flour, chopped spinach, grated carrot, chopped onion, green chili, cumin seeds, turmeric powder, and salt.
- Gradually add water and knead the mixture into a smooth dough. Cover with a damp cloth and let it rest for 10 minutes.
- Divide the dough into equal portions and roll each portion into a ball.
- On a floured surface, flatten each ball with a rolling pin to form a circle about 6 inches in diameter.
- Heat a tawa or non-stick pan over medium heat. Place the rolled roti on the hot pan and cook for about 1-2 minutes or until small bubbles appear.
- Flip the roti and drizzle a little oil on the cooked side. Cook for another 1-2 minutes, pressing gently with a spatula until golden brown.
- Repeat the process for the remaining dough balls, adding more oil as needed.
- Serve hot with chutney or yogurt.
