Ingredients

  • Whole wheat flour - 1 cup
  • Chickpea flour (besan) - 2 tablespoons
  • Finely chopped spinach - 1/2 cup
  • Grated carrot - 1/4 cup
  • Chopped onion - 1/4 cup
  • Green chili (finely chopped) - 1 small
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Water - as needed
  • Oil - for cooking

Steps

  1. In a mixing bowl, combine whole wheat flour, chickpea flour, chopped spinach, grated carrot, chopped onion, green chili, cumin seeds, turmeric powder, and salt.
  2. Gradually add water and knead the mixture into a smooth dough. Cover with a damp cloth and let it rest for 10 minutes.
  3. Divide the dough into equal portions and roll each portion into a ball.
  4. On a floured surface, flatten each ball with a rolling pin to form a circle about 6 inches in diameter.
  5. Heat a tawa or non-stick pan over medium heat. Place the rolled roti on the hot pan and cook for about 1-2 minutes or until small bubbles appear.
  6. Flip the roti and drizzle a little oil on the cooked side. Cook for another 1-2 minutes, pressing gently with a spatula until golden brown.
  7. Repeat the process for the remaining dough balls, adding more oil as needed.
  8. Serve hot with chutney or yogurt.
