Steps

  1. In a mixing bowl, combine semolina, rice flour, and all-purpose flour.
  2. Add cumin seeds, black pepper, green chilies, grated ginger, chopped onion, coriander leaves, and salt to the flour mixture.
  3. Gradually add water to the mixture, stirring well to ensure a smooth, pourable batter. Let it rest for 15 minutes.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil.
  5. Pour a ladleful of the batter onto the skillet, spreading it in a circular motion to form a thin layer.
  6. Drizzle a little oil around the edges and cook for 2-3 minutes until the edges turn golden and crispy.
  7. Flip the dosa and cook for another minute. Repeat with the remaining batter.
  8. Serve hot with coconut chutney and sambar.
