  • Basmati rice - 100 grams
  • Water - 500 ml
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves - a handful, chopped
  • Oil - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large pot, heat the oil over medium heat and add the mustard seeds. Once they start to pop, add the cumin seeds and let them sizzle.
  3. Add the finely chopped onion and green chili to the pot, sautéing until the onion becomes translucent.
  4. Stir in the chopped tomato and turmeric powder, cooking until the tomato softens.
  5. Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices.
  6. Add the water and salt to the pot, bringing it to a boil. Once boiling, reduce the heat to low, cover, and simmer for 10 minutes.
  7. After 10 minutes, add the ragi flour to the pot, stirring well to combine. Cover and cook for an additional 10 minutes, or until the rice is cooked and the ragi is well incorporated.
  8. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and garnish with chopped coriander leaves before serving.
