- Cooked rice - 1 cup
- Tamarind paste - 2 tablespoons
- Peanuts - 1/4 cup
- Chana dal - 1 tablespoon
- Urad dal - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1 teaspoon
- Oil - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat 1 tablespoon of oil in a pan over medium heat. Add peanuts and roast until golden brown. Remove and set aside.
- In the same pan, add the remaining oil. Add mustard seeds and let them splutter.
- Add chana dal, urad dal, and curry leaves. Sauté until the dals turn golden brown.
- Stir in turmeric powder and red chili powder, cooking for another minute.
- Add the tamarind paste and salt, mixing well. Cook for 2-3 minutes until the mixture thickens slightly.
- In a large bowl, combine the cooked rice with the tamarind mixture and roasted peanuts. Mix gently to avoid breaking the rice grains.
- Garnish with fresh coriander leaves and serve warm.
