- Basmati rice - 1 cup
- Water - 2 cups
- Oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Bay leaf - 1
- Cloves - 2
- Cardamom - 2 pods
- Cinnamon stick - 1 inch
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Mixed vegetables (carrots, peas, beans) - 1 cup, chopped
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch, then soak it in water for about 15 minutes.
- In a large pot, heat the oil over medium heat. Add cumin seeds, bay leaf, cloves, cardamom, and cinnamon stick, and sauté for a minute until fragrant.
- Add the sliced onion and sauté until it turns golden brown, about 5 minutes.
- Stir in the minced garlic, grated ginger, and slit green chili, cooking for another 2 minutes until the raw smell disappears.
- Add the chopped mixed vegetables, turmeric powder, coriander powder, and salt. Cook for 3-4 minutes until the vegetables are slightly tender.
- Drain the soaked rice and add it to the pot, gently stirring to mix with the spices and vegetables.
- Pour in 2 cups of water and bring it to a boil. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 15 minutes, or until the rice is cooked and water is absorbed.
- Remove from heat and let it rest, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh coriander leaves and serve hot.
