Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Bay leaf - 1
  • Cloves - 2
  • Cardamom - 2 pods
  • Cinnamon stick - 1 inch
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Mixed vegetables (carrots, peas, beans) - 1 cup, chopped
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch, then soak it in water for about 15 minutes.
  2. In a large pot, heat the oil over medium heat. Add cumin seeds, bay leaf, cloves, cardamom, and cinnamon stick, and sauté for a minute until fragrant.
  3. Add the sliced onion and sauté until it turns golden brown, about 5 minutes.
  4. Stir in the minced garlic, grated ginger, and slit green chili, cooking for another 2 minutes until the raw smell disappears.
  5. Add the chopped mixed vegetables, turmeric powder, coriander powder, and salt. Cook for 3-4 minutes until the vegetables are slightly tender.
  6. Drain the soaked rice and add it to the pot, gently stirring to mix with the spices and vegetables.
  7. Pour in 2 cups of water and bring it to a boil. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 15 minutes, or until the rice is cooked and water is absorbed.
  8. Remove from heat and let it rest, covered, for 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with fresh coriander leaves and serve hot.
