- Semolina - 100 grams
- All-purpose flour - 50 grams
- Baking soda - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Water - as needed
- Chickpeas - 100 grams (cooked)
- Boiled potatoes - 100 grams (mashed)
- Red onion - 1 small (finely chopped)
- Coriander leaves - 2 tablespoons (finely chopped)
- Green chili - 1 (finely chopped)
- Chaat masala - 1/2 teaspoon
- Pani Puri masala - 1 teaspoon
- Tamarind pulp - 2 tablespoons
- Mint leaves - 1/2 cup (packed)
- Cilantro - 1/2 cup (packed)
- Lemon juice - 1 tablespoon
- Black salt - 1/2 teaspoon
- Cold water - 500 ml
Steps
- In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 30 minutes.
- Divide the rested dough into small balls and roll each ball into a thin circle. Heat oil in a deep pan and fry the circles until they puff up and turn golden brown. Remove and drain excess oil on paper towels.
- In another bowl, mix cooked chickpeas, mashed potatoes, chopped onions, coriander leaves, green chili, chaat masala, and a pinch of salt. This will be the filling for the puris.
- To prepare the spicy water, blend mint leaves, cilantro, tamarind pulp, lemon juice, black salt, and Pani Puri masala with cold water until smooth. Strain the mixture and adjust seasoning to taste.
- To serve, take a puri, gently crack the top, fill it with the chickpea and potato mixture, and dip it into the spicy water. Enjoy immediately!
