Ingredients

  • Mutton (bone-in, cut into pieces) - 500 grams
  • Onion (finely chopped) - 1 large (200 grams)
  • Tomato (chopped) - 1 medium (100 grams)
  • Ginger-garlic paste - 1 tablespoon
  • Coconut (grated) - 50 grams
  • Green chilies (slit) - 2
  • Curry leaves - 10 leaves
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Oil (vegetable or coconut) - 2 tablespoons
  • Water - 500 ml
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Heat oil in a heavy-bottomed pot over medium heat. Add the chopped onions and sauté until golden brown.
  2. Add the ginger-garlic paste and green chilies, and sauté for another 2 minutes until fragrant.
  3. Stir in the chopped tomatoes and cook until they soften and oil separates from the mixture.
  4. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes.
  5. Add the mutton pieces to the pot, stirring to coat them in the spice mixture. Cook for about 5-7 minutes until the mutton begins to brown.
  6. Add the grated coconut and curry leaves, mixing well. Then pour in the water and bring to a boil.
  7. Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, or until the mutton is tender. Check occasionally and add more water if needed.
  8. Once the mutton is cooked, sprinkle garam masala and mix well. Simmer uncovered for another 5 minutes.
  9. Garnish with fresh coriander leaves and serve hot with steamed rice or Indian bread.
